How it all began…
As with most great success stories, the beginning is always fabled—and such is the case with Fat Belly’s! Locked away in a castle in coastal Sweden, Fat Belly Pub’s owner and founder, Scott Parker, began dreaming up the legacy that would later become the Fat Belly’s you know and love today. With just a sketchpad and pen at his disposal, Scott whipped up the starting concepts for the iconic brand: quality food at an affordable price, with an atmosphere you could feel at home drinking a beer at. The name, however, eluded him, and so it remained a dream. For now.

The experience Scott gained in Sweden translated to success when he landed in the states in 1994. From there he helped open beautiful spots in Providence, such as Café Nuovo, and revived historic landmarks in Newport, such as the Cannfield House, which he turned into a multi award-winning fine dining experience.
